Living in the wonderful state of Maryland surely has many advantages. It has been said that Maryland is a miniature America. We have the mountains ( not as big and breathtaking as the Midwest or Canada), the farm land, water areas and Atlantic Ocean, the beach, a thriving city, Annapolis with our Navy and capitol, and the marvelous Chesapeake Bay. To be a true Marylander, you must enjoy seafood, especially our wonderful crabs from the bay. When you travel to Maryland, plan on getting a crab cake or two from one of our many awesome restaurants and markets. Many recipes are available for a quality crab cake. Here is one recipe from Barbara Mikulski, Maryland State Senator, that was featured in the July issue of Baltimore Magazine. The recipe is as follows: 1 lb. fresh jumbo lump crab meat (with some backfin if needed) 2 slices white bread 1 tablespoon mayonnaise
1 tablespoon Dijon mustard 2 teaspoons McCormick’s Old Bay Seasoning 1 tablespoon snipped parsley ( optional) 1 egg (egg substitute if neccessary) Beat the egg in a bowl. Trim the crusts from the bread & break slices into small pieces. Add these pieces into the bowl with the egg. Mix in the mayonnaise, Dijon mustard, seasoning, and parsley, then beat well. Place the crab meat in a separate bowl, then pour the egg mixture over the top of it. Gently toss or fold the ingredients together, taking care not to break up the lumps of crabmeat. Form the crab cakes by hand into patties about 3 to 4 inches wide by 1 inch( plus or minus) thick. Place the cakes into your refrigerator for at least 45 minutes before cooking. This is important so that they don’t fall apart. Broil the crab cakes about 4 to 5 minutes on each side until nicely browned, lightly crisped. Serve with tartar sauce, mustard, or cocktail sauce on the side. Should serve six. Maryland has a wide variety of seafood, so stop by to try what is readily available here. Many states offer what they call a Maryland crab cake, but they aren’t even close, for the most part. If you want the best, pick only a genuine Maryland crab cake!
